What makes our Whiskeys special?

Hooker’s House Bourbon is an exciting new Bourbon, born in Kentucky and matured in Sonoma Valley’s wine country. After spending time in a Bourbon-Belt Rick House, the Bourbon was double barreled and additionally aged in neutral Pinot Noir barrels from Schug Winery here in the Sonoma, California. Prohibition Spirits has combined the best of both worlds for a truly remarkable first of its kind American Spirit from Wine Country.  The process of finishing the Bourbon in Pinot Noir barrels produces a never before tasted premium class of Bourbon filled with dark fruit flavor and smell. (HHB 100 proof small batch high Rye Bourbon finished in Pinot Noir barrels)

For Hooker’s House Rye we expanded on our unique Sonoma-Style wine barrel finishing process.  This time we filled old Vine Zinfandel barrels with 95% Rye whiskey at cask strength.  The bold and spicy Rye aged with a big Zin makes a perfect pairing combination.  Rye lovers you will be rewarded with Hooker’s House Rye. (HHR 94 proof, 95% American Rye small batch Whiskey finished in Zinfandel barrels)

Hooker’s House General’s Reserve.  While sourcing our Bourbon and Rye we stumbled onto something fabulous.  Four barrels of 21 year old Bourbon stashed away in the back of a rick house.  What the angels left behind was amazingly complex old Bourbon that can stand up to any Bourbon out there.  Our gamble is now your reward – if you can find it. (HHB21 94 proof, 21 year old single barrel bourbon, 371 bottles produced)

Hooker’s House Private’s Select.  Not all Whiskeys can be like our limited reserve.  That is why we created Private’s Select White Corn Whiskey.  Our high character 100% corn whiskey is distilled in small batches on a cooper still. The lower proof distillation and mason jar packaging gives it that primitive moonshine appeal.  Available Christmas 2012

Hooker House Whiskeys are a tribute to General Joseph Hooker (Fighting Joe) and his over indulgence and sometime outrageous behavior and lifestyle. Although his military practice was often questioned, his love of whiskey and women were not. His Army reputation as a “ladies man” began early in his career and he was referred as the “Handsome Captain” during the Mexican and American war. The general kept the morale of his troops happy and in good spirits by allowing a lot of freedom, including a posse of ladies that would follow his troops around. At first the women became known as “Hooker’s Girl’s” or “Hooker’s Brigade”. Then later became just plain “Hookers”. The legendary General liked to carry on so much with women and whiskey that he popularized the word Hookers to its common use. General Hooker came to Sonoma in 1849 to secure the territory during the California Gold rush and Sonoma was the military outpost for most of the northwest.  He had difficulty trying to procure a new military commission during the Civil War due to his notorious reputation of drinking, gambling and quarrels with his superiors. Eventually he received a commission as a General in the Civil War and was defeated by General Lee in the battle of Look Out Mountain. The General’s home, Hooker House, located off the historic plaza in Sonoma is now a museum celebrating his spirited life.  Thanks to Prohibition Spirits, the legend of General Joseph Hooker lives on in Hooker’s House of Bourbon.

What makes Hooker’s House Bourbon different than other brands? It is our Pinot Noir doubled-barred aging process. We have hand selected premium straight single-barrel Bourbon from an excellent Kentucky distillery. The Bourbon has aged for over 6 years in new oak barrels and never blended. It contains a high content of rye, making it spicier and a little bolder. After initial aging in a Bourbon belt rick house, each barrel is transferred at barrel strength into a used Pinot Noir barrels from the Carneros wine region of Sonoma Valley. The French wine barrels were hand selected based on flavor profiles from the previous wine vintages by the head wine maker Mike Cox who had commissioned these barrels while visiting Burgundy, France. The secondary aging or doubling-barreling imparts subtle flavors and nuisances into Hooker’s House Bourbon creating a one of kind refined balanced Bourbon. Hooker’s House Bourbon is blended with natural spring water from the Carneros wine appellations’ volcano formation. Hooker’s House Bourbon is smooth and refined with notes of dried apricot, violets, cherries, coffee, caramel, vanilla and winter baking spices.
